High Protein Cheesecake Jars

Ingredients 

Cheesecake:

  • 4 cookies (biscoff, vanilla wafers, simple mills vanilla crackers, or similar)

  • 1 cup cottage cheese

  • 1/2 cup plain Greek yogurt

  • 1/2 tsp almond extract

  • 1 tsp vanilla extract

  • 1/4 cup maple syrup

Toppings:

  • 1/4 cup diced strawberries

  • 1 tbsp sprinkles

Supplies:

  • 2 ramekins or small jars

Instructions 

  1. Crush cookies and divide in half. Then line two ramekins with crushed cookies to serve as a base.

  2. In a blender, combine all remaining cheesecake mixture ingredients.

  3. Spoon your blended mixture into the two ramekins

  4. Top with the strawberries and sprinkles

  5. Enjoy

    *Note: If making ahead, stop at Step 3 and refrigerate. Add toppings once ready to serve.


    **Variations:

    • You can skip the cookie base altogether and eat with a spoon or serve as a fruit dip

    • You can get creative with mixture flavors, sub the almond extract for coconut for a tropical twist

    • You can be adventurous with the base, I’ve added a lemon curd layer on the bottom in place of the cookie layer
