High Protein Cheesecake Jars
Ingredients
Cheesecake:
4 cookies (biscoff, vanilla wafers, simple mills vanilla crackers, or similar)
1 cup cottage cheese
1/2 cup plain Greek yogurt
1/2 tsp almond extract
1 tsp vanilla extract
1/4 cup maple syrup
Toppings:
1/4 cup diced strawberries
1 tbsp sprinkles
Supplies:
2 ramekins or small jars
Instructions
Crush cookies and divide in half. Then line two ramekins with crushed cookies to serve as a base.
In a blender, combine all remaining cheesecake mixture ingredients.
Spoon your blended mixture into the two ramekins
Top with the strawberries and sprinkles
Enjoy
*Note: If making ahead, stop at Step 3 and refrigerate. Add toppings once ready to serve.
**Variations:You can skip the cookie base altogether and eat with a spoon or serve as a fruit dip
You can get creative with mixture flavors, sub the almond extract for coconut for a tropical twist
You can be adventurous with the base, I’ve added a lemon curd layer on the bottom in place of the cookie layer
