Easy Aji Verde Sauce
I hope this becomes your new go-to for serving with chicken, steak, potatoes, or as a salad dressing to take your weeknight meals up a notch
Ingredients
1 fresh jalapeño (or more for extra spice)
2 cups freshly picked cilantro leaves and small stems
1/3 cup grated cotija cheese
2 medium cloves of garlic
juice from 1/2 lime
1/2 cup mayonnaise (adjust to taste)
Kosher salt and freshly ground black pepper
Supplies:
Vitamix or high-powered blender
Instructions
Combine all ingredients in a blender and blend until smooth.
*Note: You can double-batch and freeze in large ice cube trays, pop out when needed to dethaw
**Variations:You can substitute cojita for feta or parmesan if needed
You can decrease mayo and use greek yogurt for a different style sauce
