Easy Aji Verde Sauce

I hope this becomes your new go-to for serving with chicken, steak, potatoes, or as a salad dressing to take your weeknight meals up a notch

Ingredients 

  • 1 fresh jalapeño (or more for extra spice)

  • 2 cups freshly picked cilantro leaves and small stems

  • 1/3 cup grated cotija cheese

  • 2 medium cloves of garlic

  • juice from 1/2 lime

  • 1/2 cup mayonnaise (adjust to taste)

  • Kosher salt and freshly ground black pepper

Supplies:

  • Vitamix or high-powered blender

Instructions 

  1. Combine all ingredients in a blender and blend until smooth.

    *Note: You can double-batch and freeze in large ice cube trays, pop out when needed to dethaw


    **Variations:

    • You can substitute cojita for feta or parmesan if needed

    • You can decrease mayo and use greek yogurt for a different style sauce
